Profiling and Repair
The first step in the sharpening process is to return to the basics. This category includes coarse sharpening stones dedicated to blades requiring profile repair or chip removal. A low-grit stone works decisively and quickly, allowing for aggressive steel removal.
Application: Repairing damaged edges, changing the sharpening angle, sharpening very dull knives.
